We ALMOST have a date...

As some of you may know, we were "for sure" going to find out when Tel felt to flight school "on May 11th". Well after 10 days of no answer (Tel actually had a guy at work try calling Captain Smith to see if he was just screening Tel's calls- which we wasn't), he finally answered his phone. He told Tel that he had some dates for August! He also said that he was bargaining with some other people to see if he could get it sooner. However, Tel & I decided we like the idea of August. It will give us the summer to play (and not be so blasted hot in AL), Tel finishes another semester of MS classes in August, we will have time to sell the house, potty train Maverick, and work-out other issues. So Tel is going to call him Monday and tell him we will take the August date. Maybe, just maybe it will be for real this time...

Tomato-Basil Fettuccini

I don't really have anything to say, but just felt like saying "hi". So here is what we are having for dinner tonight. In hopes that it inspires you all to send me some dinner ideas :)

Ingredients:
1/4 C chopped onion (Tel has an "onion thing" so I use minced onions which works well too)
1 Tbsp dry basil or 6 fresh leaves,
chopped1 clove garlic, minced
1/4 C olive oil (it's healthier, but I usually just use canola oil)
3 1/2 C chopped tomatoes
1 tsp salt
1/4 tsp pepper
12 oz fettuccini (I usually use a little less than 12 oz)
1/2 C grated parmesan cheese

Directions:Saute onion and garlic in oil. Chop tomatoes (use fresh or canned).Add tomatoes, basil, salt, & pepper to onion. Simmer 15-20 min. Cook fettuccini according to package, drain well. Immediately toss hot fettuccini with tomato-basil sauce. Enjoy!
